All the pineapples I have bought lately have not been ripe enough. I like juicy pineapple. 

@Sooner Wanted to let you know I saw a video Blue Jean Chef did on how to ripen pineapple.

She said to remove that green spiky top part. 

I had just bought a pineapple that was yellow on about the bottom half so we removed the spiky top. Turn the pineapple upside down on a plate for 1-2 days. I waited 2 days. The juices will run down through the rest of the pineapple. It works.

Just ate some juicy pineapple.

@Nightowlz  I did not know that! Thanks for the info.  One of the reasons I don't buy pineapple often, it's because it had always been a cr*p shoot for me picking out a ripe one.

 

On a somewhat related topic, I just got back from Costco, and they were sampling pineapple whip, by Dole.  It's like a gelato, and it's in small little personal size cups.  Very, very good and refreshing, and yes I bought some.  Lol

Thanks, @Nightowlz. Fresh, sweet & juicy pineapple is my very favorite fruit.

 

I was in my 20s the first time I ever bought a fresh pineapple. We were having company, & I'd planned on having a nice bowl of it for dessert.

Imagine my surprise when after cutting it, I saw what a small amount of fruit there actually was. I'm sure I butchered it badly.

Too bad there weren't any youtube how-to videos back then! Smiley Very Happy

 

Which reminds me of the first corned beef I ever bought. I had no idea how they shrunk after cooking, & had bought the smallest one that I could find since it was only for me and my husband back then.

I swear, when I fished it out of the pot, it was the size of a deck of cards! Smiley LOL

@Nightowlz Thanks for the tip.  Today, I actually saw a large machine at the store (new there) that must core it now too.  I do have a kitchen gadget that cores it perfectly though.

 

I miss the blue jean chef shows!  Meredith is great.

@Nightowlz  Thanks for the tip!  I did not know you could ripen pineapple after it was picked. 

The way I check for ripe at the store is to pick out one of the leaves from the top center of the pineapple.  If it comes out easily, I take it. If it resists tugging, I leave it.

First time I ate pineapple was when we lived in Hawaii in the 60's. I don't remember first time I bought it.

Those YouTube videos come in handy to find solutions for just about everything.

Never made corned beef. It must shrink the same as beef brisket. 

DH just bought another pineapple. I think it will take longer than 1-2 days. It's really green.
