Re: Perfect way to hard-cook eggs

I had that Dash item from HSN.  It worked OK although I never figured out how to do omelots liked they showed in the presentation.  It broke after 6 months and did not replace it.

Now I put the eggs in a pot, cover with water, bring to a boil and let cook for about 12 minutes on a simmer.  I then put them in a bowl of ice for a few minutes and peel with little problem.  Works better than the Dash.

Re: Perfect way to hard-cook eggs

I did 12 eggs at one time in the steamer insert once water had come to a boil and followed the instructions of steaming for about 13 minutes following by a short bath in a bowl of ice water..

Timing might depend on how many eggs you're cooking or the size of the cooking vessel.

When I tried this, I needed to hard-cook 24 eggs, so did them in two batches in a fairly large pot.  Some of those eggs were fresh from the store and I was worried how I was going to peel them neatly, based on past experience with fresh eggs.  All turned out well.

Re: Perfect way to hard-cook eggs

@novamc1. Thank you for the information.  I am going to try it.  No matter what methods I have used, fresh eggs do not peel easily and they are an ugly mess with the egg whites not releasing from the shells.

I can’t wait to try steaming.

Re: Perfect way to hard-cook eggs

got this from qvc years ago and it is still going strong......love steaming my eggs. i use older eggs because they peel so much better. it is also big enough for steaming a few regular sized hot dogs if you like them that way.

I put my eggs in my air fryer, 270 degrees for 16 minutes, then into ice water for 5 min.  Perfect hard boilled eggs every time.

Yep.  I was a huge egg cooker fan until I got the Instant Pot.  THAT makes wonderful hard cooked eggs.

Hard cooked eggs: Cover eggs in cold water, bring to boil, then turn off heat and let it sit for 13 minutes. Drain, rinse in cold water & perfect eggs. No ring, no rubber texture. Martha Stewarts technique. IMO: Cook's Illustrated makes everythng harder than it hast to be. Not a fan.

@bonappetit  Normally I DO agree with you, but I have to say that steaming method beats anything we've ever tried except the Instant Pot.

This is what I do, but only for 10 minutes.

I do the cold water, boil, and set 12 minutes as well.   I have a krups egg cooker and use if I'm going to eat them hot, there's always a small part in the center that is never done.
