Just got my Instant Pot yesterday and am thinking about cooking pot roast with potatoes and carrots as my first meal. See a lot of recipes that use baby potatoes which I have never used. We always made pot roast with regular sized potatoes that we peeled and cut up. Looks like people using the baby potatoes are just putting them into the pot whole without peeling. Since I'm not used to leaving peels on, could any of you tell me what the texture is like after cooking. I mean, are they tough or hard to chew? Would appreciate your help. Thanks.

I leave the peels on.  Lots of nutritional value and I've never found them tough or, in any way, undesirable.

But you can do it however YOU want.  Smiley Happy

Of course, one would scrub them first.

You definitely don't need to peel baby potatoes; their skin is so thin that it adds only a bit of texture, which most people (including all the kids I know) enjoy. Try them once and see what you think—then you'll know whether you want to keep using them or whether you'd prefer to go back to using peeled Russets instead. Good luck! Pressure cooking makes so many meals so much quicker and easier...

I just peel the ends of each potato, it seems not to curl the skins, and the flavor enters the potato better.

Depends on the skin. Russets, yes unless making baked potatoes. Skin is too thick.

Yukon gold, fingerlings, red or baby potatoes, no. Very thin skin.

Just our preference.

Fiber too. Leave peels on. Checked walmart again today and still no Pioneer Women Instant Pots, no Ellen Degneras clothes either. Guess they hold everything back till Christmas roll out.

Thanks everyone. I'll be "brave" and try them with the skins on. Sure will make things easier as well.
