Pasta Sauce, Can I Freeze it?

I made a pasta sauce tonight that was more than I needed for the amount of pasta I was cooking.  I couldn't figue out how to halve it since it started out with 1/4 cup of wine that had to be reduced by half.  The basic ingredients are wine, whipping cream, Italian Cheese mix (parmesan, romano, etc.).  Besides that, just garlic and Cajun seasoning.  Can the excess sauce be frozen?

I don't know how it will do with the cream and cheese which may separate, but I can tell you that half of 1/4 cup is 2Tbsp.  There are 16 Tbsp. In a cup.

@Icegoddess. It does appear you can freeze heavy cream.

You can freeze the entire unopened carton, just double wrap in freezer bags. Thaw cream in the fridge, and shake the carton prior to opening – do not refreeze! ... Cream style may separate when thawed

Yeah, but how does one cook and reduce 2 Tbs?

Yes!  I freeze pasta sauce. I fill several 6oz. containers. I find that's the right amount for a serving for me.  😁

If you have a WalMart, look for pint size ZipLoc bags:  I use them for freezing large batches of marinara sauce that I make 3 times a year.    They can lay flat until frozen and then stacked to take up less room in the freezer than upright containers.

I think you'll find the quality of sauce will not be very good.  Usually, cream separates after being frozen.  I would have the leftovers in a couple of days.  Maybe you can freeze a small amount and see what it's like when you thaw it.

Yes.  I use a Food Saver to squeeze out the air, and vacumn seal.  The sauce  will last in the freezer for at least one year without loss of quality.
