Parents Visiting for Christmas!

I am so excited! My Mom called me yesterday and told me that she and my Dad will be our guests for Christmas!

DH and I usually go to their house (2 hours away) but the plans were different this year.

Mom told me not to cook, but I have to show her that she trained me well:

Simple Roasted Turkey

Blueberry Balsamic Roasted Vegetables

Sauteed Kale with Garlic

Rolls or cornbread (Mom will disown me if I don't)

My Dad is on blood pressure medication, so the menu is with him in mind.

Any other low carb, low sodium suggestions? And Bacon Fatty-liscious will not be on the menu!

How exciting! That's so fun that they will come to your house fo the holiday this year. What a treat it will be for them to have you cook a well thought out meal for everyone to enjoy.

What fun for you! Your menu sounds scrummy-licious. Maybe you could add a simple salad for something fresh and crunchy? Butter lettuce and radicchio with a very light, lemony dressing, toasted sliced almonds on top, something like that? And, hey, a slice of crisp bacon crumbled wouldn't add much fat, but maybe a lot of good flavor if you are missing it.

Kay, GMTA! I am going to add purple and green cabbage for color and crunch.

My Dad is a health nut, so the bacon will be out (sodium).
