I usually turn the parchment paper the other side to prevent the roll factor. There is no correct side to parchment papers I believe.

reSmiley Tonguearchment paper,  generally speaking you would not need to put any oil or grease on the parchment paper unless baking instructions indicate differently. 

i have used parchment paper to bake or re-heat PIZZA and it works great.

You can buy parchment paper sheets the exactly fit a cookie sheet. I buy mine from KA Flour and all our local grocery stores carry them now also. So much more covenient.

I use the parchment sheets, too. Once you get used to them, you can't live without them! No more rolling/curling of paper. I buy the flat sheets from King Arthur Flour. 

 

I've never greased the parchment paper, regardless of recipe directions. Nothing sticks to it.

Oh, I so agree that sheets are another great idea - as long as you use mostly one size.    What's nice, too, is that they store flat.

 

For me, the rolls are more practical except that I have a bunch of 10" ROUNDS that I use for certain things.  The ones I have (I got at either KA or Amazon), come in a plastic zip-lock type bag with a round piece of cardboard to keep them flat so I can just slide it into the side of a tall cabinet.

 

Man, if I had to cut rounds, this klutz would be in big trouble.  hehe - probably wouldn't have any fingers left.  Smiley Happy
