There are some really good tips here. I will copy them down. Your pies look professional . I am determined now, to get this done right. It's become personal now..lol.

@Ainhisg I always thought I would like to make a cherry pie, but can't get tart cherries here besides canned or cherry pie filling, so I figure what's the point. I'm lacking in the pie department anyways.

I've never baked an apple pie, but I can tell you my 93yo neighbor told me (when I was going shopping for her) to only buy Courtlands 'cause the other get mushy when baked - and I assume she must have baked a lot of apple pies in her time!
