@dancingwoman your crust is so pretty! I love to make pies. My husband doesn't like apple, but I love it. I read the reviews for this recipe, and many said the citrus component ruined the flavor of the pie. No? I also noticed in the photo posted on Food Network for this pie that the middle of the pie sunk, so apparently, the OP is not the only one with apples shrinking in the pie. One of the reviews for the recipe gave a list of the best apples to use for apple pie.
I did read on the Pioneer Woman apple pie recipe to slice the apples evenly and pack them in the crust leaving as little space as possible between the slices. The recipe said this would help stop the pie from deflating.

@Ainhisg Yep I pack my apples down before putting the top crust on. I also use apples that aren't fully ripe. Less juicy that way. Make sure they are evenly sliced. Not too thin or thick. I think some recipes work for some and not for others. I should mention I don't use lemon. Sorry I should have put this in my other post. I'm in the hospital I was dehydrated and nauseous from my last chemo. Slight lung infection. Wasn't thinking too clearly. ❤️DW

@dancingwoman you are a woman after my own heart. I think the art of making pies is a lost art. Here is a pic of the last pie I made--cherry pie--along with a couple of other photos of pies I've made. I used to have a cooking blog hence the photos.
I'm so sorry you're in the hospital, and I am sorry about your cancer diagnosis.

I use to love making pies. The best one I ever made was an apple with granny smith apples.
I don't remember having problems with shrinking or anything. I just followed the recipe and it usually came out just right. I did add some tips of my own along the way too.
I don't remember that much butter and I did add probably more cinnamon than was in the
recipe. I also am pretty sure I did use premade crusts at least most of the time.
A blueberry pie was a little more challenging as it had more liquid than the apples.
I do think the recipe itself should help with any challenges like shrinking, or too runny etc.
I remember baking the crust a little before putting in the apples or berries to make sure it didn't get soggy or runny. I don't remember the recipe calling for that, I just did it after some misses and thought it was a good idea.
The best apple pie I ever had was made by a friend and it had a lot of cinnamon in it.
Your crust looks beautiful and so scrumptious! I think the crust is one of the most difficult parts of pie making and what can make or break a pie. And it is what seems to really make a pie homemade.

@Ainhisg Thanks for the kind words. I haven't made cream pies or meringue. DH likes fruit pies. He'd love your cherry pie. They all look delicious. I'm not a sweet eater so I'll make whatever kind he likes. DW
