Eat half the loaf fresh, freeze half, and cube any leftovers to feed the birds.

I buy low carb bread online.  I freeze it....I portion it out and only put a small amount in the fridge to thaw. I might eat two pieces every other day.  It depends how much you eat that you. Would keen refrigerated.  I would try to use up the refrigerated bread up within a week.

I wrap it in waxed paper and leave it on the counter for two or three days. Waxed paper doesn't create such a tight seal so it doesn't cause mold. If we're not going to eat it right away, I freeze it in bread bags that I purchased on Amazon.

I haven't been on here for a few days, so didn't know about the additional posts. Thanks for all of the useful suggestions. I still haven't decided if I'm going to keep this or not, but if I do, I'll try out some of the ideas you all have told me about.
