How about Shephards Pie if you have potatoes and hamburg and some king of veggie. Not sure if you could keep it hot though. Chicken wings are always good hot or cold. Have fun.

How about Meatloaf Cupcakes with either a mashed potato or sweet potato for frosting? I am making this with ground turkey for a potluck luncheon Monday. I like to put diced or shredded veggies in my turkey meatloaf.

This is not a culinary feat, but is very easy to make, is inexpensive, and will feed a lot of people.
How about macaroni with meat and spaghetti sauce? It will stretch a long way. I don't have measurements, but here goes:
brown your hamburger meat (and onions and peppers, if desired)
use Ragu or some other spaghetti sauce, or make your own, if you have time.
Cook the macaroni and mix all together. You can add shredded mozzarella to the top.
Men and children especially like these types of dishes.

I attended a potluck last week and I made a large pan of baked chicken spaghetti and everyone loved it. My pan was the largest one there and was the first one gone. It is easy to make and it goes a long way.

You can buy a couple of those family size packs of cut up chicken. There are some excellent recipes for ""Oven Fried Chicken"". I made one last week - so quick and easy and it's a grab-n-go dish.

Sweet and sour meatballs in a crockpot. You can buy frozen meatballs in a package, or use smoked sausage cut into pieces.
King Ranch Chicken casserole
Rotel chicken spaghetti
There was a recipe posted a couple of months ago for chicken dumpling casserole that was really good

I make a quick "faux" lasagna dish that is always very popular, feeds a lot and takes little effort:
In a large pot, brown 1 lb. ground beef, 1 lb. Italian sausage (removed from casings), a teaspoon of chopped garlic and 1 chopped onion.
Add a 28-oz. can crushed tomatoes and a tablespoon of Italian seasoning (or a large jar of spaghetti sauce) and 4 cups of water.
Bring to a boil and add a pound of pasta (penne or rotini is best).
Cover and cook until pasta is done (slightly undercooked since you'll be reheating the next day)
Stir in 8 oz. shredded mozzarella and a small container of ricotta.
You can make it tonight, put it in a casserole dish and reheat tomorrow - maybe sprinkle with a little more mozzarella before heating.

Dfye,
I have saved your recipe for the next time I need to take a dish to the homeless shelter for veterans that my church group helps to feed monthly. This does seem easy, quite hearty--- and looks like it'll make enough for a small army (no pun intended). You state that penne or rotini pasta is best to use. Do you think it might also work using uncooked lasagna noodles if they are broken into small pieces? Thanks for sharing your recipe.

I frequently take cocktail sausages rolled up in dough, a tube or two of crescents, each triangle cut into 1/3's. People love them and never think about taking them. Sorry this is too late for you....just sat down and browsing.
