I am glad you saw the diagram. It explains how food prices can skyrocket. They have each chosen a category of food and control most of the brands in their respective category. There have essentially eliminated competition which would encourage quality and price controls.

Most of the meat supply in the U.S. is controlled by four companies.

Ingredients

1 tsp. vanilla
2 cups chilled whipping cream, unwhipped
1 9 oz. package nabisco famous chocolate wafers

Directions

1. Combine whipped cream and vanilla in a glass bowl. Beat with mixer until stiff peaks form.
2. Spread just a tsp. of whipped cream onto each wafer. Stack wafers together. Then stand on edge on serving platter to make log.
3. Frost with remaining whipped cream. Refrigerate at least 4 hours or overnight.
4. Cut dessert diagonally into 14 slices. Store leftover cake (...if any =) ) in refrigerator.
5. Decorate with mini chocolate chips, chocolate shavings, nuts, toasted coconut or (my favorite) just serve as is!

When I was very young, my GM that baked would put a bunch of these back to back in a roll with sweetened whipped cream and maybe vanilla? and freeze!

SO good!

@rockygems123 - I just ordered a bunch of Dewey's through Amazon; I decided to try a couple of other flavors as well since ginger thins could also make a good pie crust and apple cider and pumpkin spice thins sound tasty for snacking. They're all scheduled to arrive in the next day or two, so we'll see how things go. (Dewey's offers free shipping for orders over $50 on its website, but I definitely didn't need that much for testing!) Thanks for the info about the potential sweetness level of the chocolate thins.

@loriqvc

That sounds like a nice assortment for cooking & snacking. Smiley Happy

The ginger are probably my favorite with the tiny chunks of sugared ginger. Dewey's also is a bit of nostalgia for me as my father was from a nearby town in NC.

I hope they arrive soon and if they have what do you think?

@rockygems123 - I'm definitely looking forward to the "snacking cookies"!  Smiley Happy

As for my research project, I won't have time for baking until this weekend, but I did a preliminary check of the chocolate cookies. As you can see in the photos, although the package weights are all 9 oz, the Dewey's cookies are smaller than the Nabisco ones. The flavor comparison was interesting—the Dewey's Brownie Crisps are only a teeeny bit sweeter than the Nabisco wafers and will be absolutely fine as a substitute in crusts and related applications; the Hot Cocoa Cookies were much sweeter, so I think they'd also work, but less or no sugar would need to be added. (They are yummy, though, so I'm sure they'd be great if you just want a treat!)

And interestingly, when comparing ingredients and nutritional details, Dewey's Brownie Crisps have a slightly cleaner ingredient list than the Nabisco wafers even though the fat content is a bit higher, so if I'd been comparing without being forced to do so, I might have even gone for Dewey's in my baking before this point.

Anyway, I'll come back and update the thread with results after the baking test...

[ Edited ]

I guess I'm odd one out. LOL!!! I have never seen them so I have never ate them either?

Guess there are plenty of recipes online. We like making stuff from scratch so it doesn't have all the ingredients in it we don't need.

Re: Nabisco Famous Chocolate Wafers DISCONTINUED

UPDATE #1: I baked a chocolate cream pie just as I normally would but using Dewey's Brownie Crisp cookies instead of the Nabisco ones. There was absolutely no difference in the Dewey's crust in texture or flavor, either before baking (with melted butter, a bit of sugar, and a pinch of salt) or after baking when we enjoyed the finished pie. I would definitely keep using these cookies, but it's disappointing that they cost almost twice as much as the classic Nabisco version.

UPDATE #2: I've tried a few of the seasonal limited edition flavors of the thins I bought just for snacking—the Apple Cider thins are among the best storebought cookies I've ever tasted, the Pumpkin Spice thins are very nice with a great balance of warm spices without being too overdone, and as briefly mentioned earlier in this thread, the Hot Cocoa thins have a sweet and tasty chocolate flavor. I'd recommend all of them.

Still to come: I'll be trying two flavors of ginger thins offered by Dewey's: the traditional Triple Ginger and the seasonal Gingerbread. It might be a couple of weeks before that occurs since I still have the other open boxes of cookies.  Smiley Wink
