Loss of taste and smell is normal when people get older. Older age could be the reason.

@Carmie --OMG--I remember the pink slime era----I started buying the chubs (tubes) of ground beef--as that didn't have that slime stuff--don't remember if it was anymore or less flavorful tho----and agree that the more fat it has the better tasting. I tried to grind my own once---went thru all the steps and there were many and used my Kitchen Aid meat grinder--what a huge undertaking---only did it once -----I also used to buy my beef from a local farm and it was very good----but very pricey.

I buy the 80/20 and add a pack of lipton beef or onion and some cumin, pepper of course and a pinch of sea salt. My burgers always come out delicious.

I can enjoy good ground beef as much as a steak if the flavor is there!
Lately, the ground beef is not flavorful to me but I thought it was just me! I do find that stirring a bit of Better than Bouillon helps greatly! Even fresh has extra liquid in it and it is difficult to get browned.
I won't admit it's just my getting old! Too vain!

@Kachina624 wrote:@granddi. Iv3 noticed nothing tastes as good to me as it used to. I think as one ages the taste sensation decreases. I've lot weight the past couple of years and haven't been trying. It's just that nothing tastes good anymore.
ITA!! The best way to loose weight. Nothing tastes great anymore. So, I don't eat much anymore.

Since my most recent bout with Covid, I can't smell or taste anything...
It also affected my hearing...

More salt might help the flavor also. A lot of people try to cut down on the amount of salt they use and that hurts the flavor. I'm a pretty heavy salt user, but I use a fraction of what professional chefs use. Bon Appetit has a video out "Every way to cook a hamburger" where they used a ton of salt on each burger. They tried 42 ways to cook one. Salt is a flavor enhancer and when you cut down on the salt, you decrease the flavor.

Mine doesn't either. It's actually grossing me out, it is so dry, chewy, and tasteless. I have tried the different kinds - Wagyu, Kobe, brisket, and I chew it to get some juice and then spit it out. Such a waste. I would rather spend more money on some nice tenderloin, cut it in a small portion and eat that. It's just me, no family to feed.
We have Food Lion here and also Lowe's Foods. There are other markets located in bigger towns 25 mi. away, but that's too far to go to an unfamiliar store such as Harris Teeter's or Aldi's.
I too have tried the different fat ratios, the brisket seems to be the fattiest, quite greasy in the pan, I may go back to that, but it was grossing me out too.
