We love Michael Angelo's Eggplant Parmesan!  Have't made homemade since we "discovered" it!  In fact, although this is our favorite, every one of their meals are very good.

I do the same thing with Stove Top Stuffing.  I sautee celery, onions and carrots and add chicken broth instead of water. Everyone raves about it!
