Did some picking up in my bedroom - you would NEVER know it however - it is a huge mess - will take forever. But the little one was sleep, Ricky is at Sherry's and it worked but I gave up. Was sooooooooooo tired. Lay down for a spell but did not go completely to sleep, sure wish I could have. Took Davey and the little one out as I was just plain miserable. Got chicken noodle soup - what else. Davey pigged out on a Philly Cheesesteak sandwich with onion rings but if you can believe this, he brought most of that home. Have no clue if all of us are going to come down with the punies as my Mother use to say. I am so tired - sprayed my throat and hope that helped. NOt real sore but I knew it was trying to get that way. LOL.

Tonight, I cut a pork tenderloin crosswise in thick slices, then pounded them into thin cutlets, seasoned, dipped in egg whites and water, then into seasoned panko bread crumbs, and fried quickly until crispy, roasted smashed new potatoes and carrots to go along with. I first microwave the potatoes for five to six minutes, and with the heel of my hand flatten them somewhat, put on an oiled pan and roasted until crisp at 425-450 degrees.
Using leftovers a lot lately as I have been decorating like a fiend, lol, and am too exhausted t cook at night, but of course, I must at least three times a week if not more.
A week ago, I made a marina sauce and two pounds of pasta with turkey meatballs. That night, I baked some of it with mozzarella chunks poked into it. The next time DH ate it, it was without the cheese and not baked. The other night, I added spinach to some, heavy cream, parmesan, and baked it with the mozzarella chunks, so yummy. The next time I serve it, I will fry some Adell's sausages and cut into chunks, also may add a few other ingredients. By changing it a little each time, it seems like a brand new pasta so it doesn't get boring, and cuts down on my cooking time and energy. ![]()

Like I always say Mousiegirl, nothing like leftovers!!! That pork tenderloin sounded really good, never have thought about doing it that way. Always sad if I have to toss them but sometimes I do for whatever reason. I am a firm believer in leftovers but my people here are so in and out I find it very difficult to always do that. Biggest problem I sometimes have however, is when I fix a big meal, and not all are here that I think will be here. grrr.
Still cold out West but not as bad as what we have had - thank goodness. We got some drizzle yesterday.
Little girl has a MD appointment this morning. Why is it when I have one it is an easy thing, when one of the two little ones has a MD appointment, it is back breaking. LOl. Completely different story.

Still no cooking, not quite up on top of the world yet so it is pick up time or frozen dinners. The little girl ate her noodles like crazy and she woofed down her spinach and strawberry snack bar. Weird combo but she just loves those things.

Real easy to fix meal - Fettucini Pasta and salad. Super good!!!!! I have not felt like eating any too much in a few days and this hit the spot.

flbettyboop, you have been way too silent last few days - surely you haven't given up cooking? Just kidding. Getting really lonesome here lately. Would love some company.
Need to get my act together and fix a decent dinner tonight. Davey's last day of school until next year - am going to see if there is some way his Dad can take him all of his school vacation or at least part of it.

Suspect I may toss a roast in the slow cooker - always easy to fix and always good. Will worry later about go withs. LOL. Again, have a great day.
