We had (2 of us) mac and cheese and spam last night. It's enough for us. I'm going to pursue other small meals on some TOH books that I have. I'd have added some baked beans but we had none. That was a surprise to us both, we thought we did. Tomato slices I would do next time too. Saving those for our salads today.

He's outside, using the snow blower. He couldn't even get the door to the deck open. We got a lot of snow.

So anyway, are there others where there's just 2 of you and you're now doing mini meals? I mean yeah, hot dogs are ok, but there's other meals.....there has to be. He needs soft foods to eat because of false teeth and it's harder for him to chew now. Just looking for meals for two, easy to eat, I'm going to do soups too I think and 1/2 sandwiches.

I'm thinking we will do breakfast for dinner tonight. Pancakes, scrambled eggs and sausage. Maybe throw in some kind of potato. Sometimes we do just scrambled eggs and stewed tomatoes on the side. We too are snowed in again!!

I find as we are getting older I don't like & cannot eat those larger meals. DH still likes to eat a larger breakfast or lunch & a larger dinner. I cannot eat 2 large meals daily. I either eat breakfast Or brunch & dinner when DH comes home from work. I fix him more to eat. I can do with a piece of chicken or other meat & salad is fine with me. When he makes brisket & ribs he eats that along with baked beans, potato salad & or some mac n' cheese. If I make mac n' cheese I will eat a little of that with a few slices of brisket & a few ribs or a salad. I like to eat salads. We are going to have to stop making brisket, ribs & fixins at the same time because we cannot get all that food ate up & don't like eating the same thing all week long. LOL!!! DH just made a pot of chili & a pot of jambalaya Sat. I need to make a pot of chicken noodle soup & a pot of beef stew to put the extra in the freezer. We will have several meals from the soups & stuff he made.

I think cooking ahead and freezing portions, as Nightowlz posted, is a good way to go. You could make chili, and just take out enough for one meal. Pasta sauces, soups, stews are good this way too. I make a stroganofff sauce that freezes well. Defrost one container and serve over wide egg noodles or rice, or polenta, which is easy to make and would be easy for your husband to eat.. Another recipe I like to freeze is cassoulet, which is a casserole made with carrots, celery, beans, tomatoes, sausage. The carrots and celery cook down so they are soft, and you can thinly slice the chicken sausage so it's easy to chew as well. Do you like pesto with your pasta? It's easy to.make your own, and it freezes well. You can make it with basil, but I also make a spinach pesto that's delicious. Sometimes, just boil up two servings of spaghetti, then toss with olive oil, butter, two kinds of cheese (I like parmesan and asiago), so that the cheese gets melty. Very good with a salad (if made with ingredients easy for your husband to chew.)

I do this all the time. Well, not with the Spam. Smiley Happy But I eat a lot of one to two course meals. In fact, except for the holidays when I really cook, all my meals are one or two courses.

Sometimes I want macaroni and cheese and never make more than one or two portions. I wouldn't want to make a huge amount of that and be eating it for days!

A lot of times I might eat a small chicken breast and a little bit of veg. Or I just eat a grilled cheese sandwich. Last night I had taken a packet of the ham that I made for christmas out of the freezer, and made myself a grilled ham and cheese sandwich. That's plenty enough for a dinner.

Often I cook up 2cups of brown rice and I have six or eight meals out of that. I'll just heat some up - little butter and s&p, and it's a meal in a bowl. If I have some kind of meat cooked I'll add a little of that in there. Last week I had brown rice with sausage for a few days. Love that!

My husband is still on his 'not eating after around 2:30pm' kick so he usually eats dinner (well, lunch/dinner) at the office. Consequently, I am just cooking for me 99% of the time. Not only can I NOT eat a huge plate of food anymore (or want to), but who wants to cook a huge meal for just one person (or two) every day, anyway.

I also need to make a pot of ham and beans so I can use the ham bone from the holidays. I store all these bowls of chili, soups & stews in the small ziplock bowls. I can stack them in the freezer.

Thanks ladies, I so agree about less being more of choice now for us too. I'm doing chili tomorrow but I will freeze that for left overs, that I love.

I think maybe we'll do some breakfast meals in the evening too. Love omlets.

Well, I feel good to know that I'm not alone on that.
