When I worked in  a restaurant in the 80s my boss made his best friends steak using a blow torch.  Steak went on the grill and he hit it with a blow torch flipped it over and repeated.

 

The steak had a crust and was blood red inside. I doubt the inside was even warm.

 

I couldn't even walk by his table, it was too much for me.

@Nightowlz Welcome!🥰 Your dear husband sounds like the MASTER of the grill!😁 I am certain grilled meat turns out fabulously on the Pit Boss! I was not familiar with that particular name so I Googled it, and then could only smile.😊 It is QUITE impressive!👍

@SandySparkles  Thank you, Sandy Sparkles! I love to cook all different types of meat- pork, chicken, beef, lamb etc. Yes!  I am a meat girl and I AM THE STEAK QUEEN Smiley Very HappySmiley Very HappyHeart. Tri tip sandwiches at a little barbecue stand sound like a good time.

I like steaks med well , hamburgers well done with just salt and pepper cooked outside on the grill , if inside we cook in iron frying pan
