Masterbuilt Electric Smoker Idea...what do you guys think?

I bought the Masterbuilt Smokehouse 3 rack smoker and I really like it. The only complaint I have is it doesn't put out enough smoke. I fill the water pan with water and the smoker box with dry chips. The water pan actually touches the burner and comes to a boil and boils itself dry fairly quickly. The wood chips smoke some but when the smoker gets up to temp. and the burner shuts off...smoking come to almost a complete stop. I did notice the smoker box sits off the burner fairly high. I was wondering this.....the rack that holds the water pan and smoker box, could that be put in upside down so the smoker box touches the burner and the water pan does not? The other solution I think might work is this. I almost always put a small pan under whatever I am cooking to catch the fat and keep my smoker clean. The fat seems to boil in that pan so I know it gets hot. I am thinking....fill the pan halfway with water, and instead of putting water in the water pan...I would put soaked wood chips in there and dry chips in the smoker box. What do you guys think?

Is it possible you are putting the water and chips in the wrong pans? the smaller pan is for the chips, and the larger pan for the water. The pan that sits directly on the burner is for the wood. The water does not ever boil in my smoker.

I have never had the water pan go dry in the 6+ years we have used our Masterbuilt smoker. switch around your chips and water.

An electric smoker does not make as much smoke as a wood smoker. The smokey flavor is not as intense with any electric smoker.

We chop up our own little "chunks" of wood or use broken up sticks and do not use the powdery chips at all. A lot more smoke that way!!

We have a Masterbuilt smoker & if you open the door after you get it started there is plenty of smoke. It does not produce smoke like our offset barrel smoker. Most places you buy bbq from have too much smoky flavor too them. I like how it turns out from the Masterbuilt. Does yours have the vent on top & do you open it? Do you have the digital or analog smoker? I don't think the analog has the vent on top. Ours is digital & has the vent on top & the digital control to set the temperature. We don't soak our chips but if you soak them in water overnight they should produce more smoke. Call Masterbuilt & see what they say. We just made prime rib yesterday. YUM!!!

Thanks guys...I figured it out. It was shipped to me with the bottom rack upside down and dummy me thought it was supposed to be like that.

I reversed it and the small covered chip box sits just off the burner and the water pan sits off the burner at a good distance. I fired it up and got plenty of smoke and the water did not boil off! Just had to use my head. But now I know and anyone reading this, who gets the smoker, will know to check the bottom rack. Maybe they reversed it for shipping.

I do have a New Braunfels offset wood smoker that I like...but only use it once in a while for big cookouuts. I like the masterbuilt for the ease and will cook more in it. Just glad I figured it out.
