for every pound or so of turkey, I add 1/4 cup ricotta cheese and a healthy dose of worchestershire (sp???) sauce. --- or use a duxelle mushroom additive to the meat

Is it possible you could tell them in add fat to it?
You could look locally for grass fed tallow or even Coconut oil from Costco.
Just enter you zip code and question see what is close by we should always try to support those local farmers you would be surprise what is in your own neck of the woods.

I'm about 65 miles south of the Costco/Ft. Oglethorpe exit. I shoot at a ranch a little further up, just off Exit 353, and at another club off the old Cleveland highway. Actually, once a month, generally pick up ribs from Southern Smoke BBQ, across from the flea market on the old Cleveland highway, just north of Dalton.
I go to TN for matches in Dayton, Wartrace, Greensboro, Oak Ridge. Sweetwater flea market is one of my haunts. Depending on my destination, I prefer to fly out of Chattanooga rather than Atlanta. I also use the casino flights out of Chattanooga, rather than Atlanta. I avoid driving south of me unless driving to Disney World.
Also, love to go to Abuelo's in Hamilton Square. I tell people it's a Mexican restaurant for people who say they don't like Mexican food.
We've always spent a lot of time on the back roads of GA, TN, AL, NC & MS. Our ranch and second home is on the GA/TN stateline north of Blairsville.
Probably the only reason I don't live in TN is the high sales tax AND the tax on investment income. I don't pay any state income tax in GA as we have a $65,000 per person exemption each year.

I made burgers from grassfed beef last night. I added a little bacon grease to the pan but only because I was cooking sliced onion to go on top in the same pan.
I really think it is just a matter of learning how to cook with lean meats. You do need to keep the heat moderate & cook for less time than fattier cuts.
