I'm new to low carb eating, so this might be old news to everyone else. Yesterday I found a recipe for making a fettucini substitute out of zucchini. It sounded healthy, so I tried it for dinner.

DH can be picky about food, so I didn't tell him it wasn't real pasta, I waited for him to complain. He didn't complain. I asked him if he thought there was anything odd about what he'd just eaten, and he couldn't think of anything. Wow! It passed the picky husband test with flying colors!

I used Morningstar veggie sausage links and no eggplant, but my meal was otherwise quite similar.

I wish there was a similar low carb cheat (that husbands wouldn't notice) to replace French bread. I'm missing bread more than anything else on this diet.
