This sounds like the skillet creamed corn we used to make.  Never put it into a casserole.  I don't remember it being sweet except for the sweetness of the corn.  It was one of my favorite foods.  Of course, we cut the kernels off the cob, then scraped the rest off the cob (the cream) with the back of the knife rather than buy canned corn.

I had Sweet Cornbread Cake for the first time on Thankgiving. It may have contained Jiffy. There was Corn in it too. I liked it. Is there a recipe using cornmeal and what not?

Many in my family can not eat wheat, so I substitute corn starch in recepies like this ( half the amount of flour). It always works..  I make Paul's Deen's Corn Chive Pudding. My family loves it .

This goes by several different names, we call it Mexican Spoon bread, so easy to make and good.

 

MEXICAN SPOON BREAD

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package Jiffy Corn Muffin Mix
1 cup sour cream
1/2  stick butter, melted
1 to 1 1/2 cups shredded Cheddar or any cheese that you like

 

Optional... to kick it up, sometimes I add a can of drained Green Chiles and fine diced Jalapenos.... Robin


Directions

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.

Pour into a greased 9 by 13-inch casserole dish.

Bake for 45 minutes, or until golden brown.

Remove from oven and top with Cheddar.

Return to oven for 5 to 10 minutes, or until cheese is melted.

Let stand for at least 5 minutes and then serve warm.

 

Note... recipe to make homemade cornbread mix, if you don't have Jiffy.

Homemade Cornbread Mix....

 

1-1/3 cups flour
1 cup yellow cornmeal
2 tbsp sugar
1 tbsp baking powder
1/2 tsp salt

 

OR

 

2/3 Cup Flour
1/2 Cup Yellow Cornmeal
3 Tablespoons Sugar
1 Tablespoon Baking Powder
1/4 teaspoon Salt

This is this one I have made for years.  less ingredients than some others but delicious.

 

1/2 cup butter melted

2 eggs beaten 

1 8:5 oz package of dry corn bread mix

1  15 oz CAn whole kernel corn drained

1   14.75oz CAn creamed corn

1.  Cup sour cream

 

Preheat oven to 350 degrees and lightly grease a 9x 9 baking dish.

Mix all ingredients together and spoon into dish

Bake 45 minutes in pre heated oven until top is golden brown.
