Looking for a corn casserole recipe

I saw a corn casserole recipe - not one with Jiffy Mix - and now I can't find it.

I think it had cream corn and niblets.

Anyone have a good corn casserole recipe without the Jiffy Mix or bread topping?

This one does not have niblets, so it is not the exact one you are looking for, but I saw this demonstrated on TV and it looked good – plus it was easy.  I have not tried it yet, but here it is:

 

Scalloped Cream Corn

 

1 Cup Crushed Saltine Crackers (28 Saltine Crackers)

1 Can Creamed Corn

1 Cup milk

1 Egg

1 Tbls. of finely chopped onion (optional)

 

 Mix well in bowl

 

Set oven to 350 degrees

Grease shallow casserole dish or small shallow pan (cooks better in shallow pan – otherwise, cook longer)

 

Pour mixture into pan

 

Bake approx. 20 minutes (until it sets)  It will be a lot like stuffing in consistency when done.

 

Ready to serve!

 

I think they said it served approx 6 but it is easy to double if you need more.

Broccoli Corn Bake

 

Ingredients

  • 1 ½  cups crushed butter-flavored crackers
  • 3 tablespoons butter, melted
  • 2 ½  cups frozen broccoli cuts, thawed
  • 1 can (15-1/4 ounces) whole kernel corn, drained
  • 1 can (14-3/4 ounces) cream-style corn

Directions

  • 1. In a large bowl, combine cracker crumbs and butter; set aside 1/2 cup for topping. Stir in vegetables to the remaining crumb mixture.
  • 2. Transfer to a greased 1-1/2-qt. baking dish. Sprinkle with reserved crumb topping. Bake, uncovered, at 350° for 30-35 minutes or until bubbly and top is golden brown.

I cut my broccoli small and the tastes blends in.  You do not notice it but the corn flavor is really good.

I think I used TownHouse.   Same basic flavor.  They really add to the dish.  Enjoy!
