I noticed they change colors on a whim, too.  For me, clear has always worked best.  I like to be able to see what's in them from the top, too.  Sometimes I tape cooking instructions on the underside of the lid for others in the house. I also put expiration dates on a card taped to the underside of the lid,   When I use them to store things in the bathroom, being able to see from the top is handy.  I have to admit, some of the colors are pretty.  The clear seems to make my pantry look less cluttered, and more uniform.
