I made Leah Thompson's veggie muffin recipe. She spoke about it during the KA demo on cooking day and the recipe is posted under host recipes. It is a savory muffin with grated zucchini, carrots and apples. I substituted 1/4 cup of molasses for an equal measure of sugar and also swapped 1 cup pumpkin puree for a cup of grated apple, ( I never follow a recipe very well).
Anyhow, they are delicious! BUT, and this is a big BUT. The recipe makes a mountain of batter. 4 cups of flour and 6 eggs! Next time I am halving everything. I also used my new flex blade beater and it was really amazing. Did such a fine job. Try them, but cut the recipe back a bit unless you're baking for an army!
