For me, I guess it would almost totally depend on what kinds of foods the people I'm entertaining like.    Smiley Happy

 

Glad you have time to plan it out to be just the way you want it.   Fun!  In a little way, I do miss entertaining.  I don't think I could do it anymore, but I used to enjoy it.

You could do chicken for everyone and do veggies for the vegans and use vegan cheese or no cheese.  Vegans do get tired of salads and pasta.  Stuffed mushrooms as an appetizer would be great as well.

 

Since it is summer, fresh lemonade would go down a treat.  You could also puree some strawberries and make strawberry lemonade.  It would be great with lemonade pie.

 

I am a bit stumped by the rest of the meal for the vegans.  We don't get much of them down here in rural Georgia.

I have no problem with the vegan menu. My family was vegan for years, so I can adapt just about anything once I have a menu planned.

Sorry, but I don't make it.  I buy Marie's in the vegetable section of the grocery store.  I did find this one for you.

 

Adoreqvc posted this recipe for Greek dressing the other day.

 

Greek Salad Dressing

Serves: 1¼ cups
Prep time: 10 mins
Total time: 10 mins
 
Ingredients:
  • 2 large garlic cloves, crushed through a garlic press to get a fine paste
  • 1 tablespoon chopped fresh basil, or two teaspoons dried basil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon onion powder
  • 1 tablespoon dried Mediterranean or Greek oregano leaves
  • 1 teaspoon white sugar
  • 1 teaspoon chopped fresh mint
  • Juice of one lemon (about ⅛ cup)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons water
  • 1 teaspoon Dijon mustard
  • 1 cup good quality Greek extra virgin olive oil (use Italian olive oil if you can’t find Greek)
Instructions:
  1. In blender, add all of the dressing ingredients in except oil.
  2. Turn the blender on low speed, and very slowly add the olive oil in a drizzle until the entire cup of oil has been added.
