Pasta with Roasted Cherry Tomatoes

Started 07/30/2011 Knit-Chick

I just picked a bunch of cherry tomatoes, so I thought I'd share one of our favorite pasta recipes. Cut cherry tomatoes in half and place cut-side up in a baking dish. Drizzle with olive oil and sprinkle kosher salt and black pepper. If desired add some chopped garlic too. Roast at 400 degrees until tomatoes are shriveled. In the meantime, cook your favorite pasta (we like to use angel hair for this). Drain pasta and toss with the tomatoes and oil. Add extra oil if desired. Top with cheese - either parmesean or feta is perfect tossed inSmiley Happy
