I prefer one sink. My reasoning is it's easier to clean one than two. Plus I like the extra room of one.

Sinks are an important item for me, and I wouldn't have it any other way than what I have now in the kitchen.
I MUST have, a wide double-sink (big and deep on right side and smaller and shallower on left side), so that I can use the big side to rinse vegetables, wash hands and do other chores while preparing meals, with the left side available to quickly pile up dirty utensils, bowls and pots out of the line of fire from the main sink area until I can stash the dirty ones in the dishwasher or wash by hand.
As for stainless steel.......been there, done that, too hard to keep shining and clean-looking.
As for undermount or drop-in sinks, no thanks. All I can imagine is all the bacterial and other build-up forming under the lip between sink and counter where dirty water splashes all the time.
I want my countertops and sink to be one molded piece with a single-handled faucet and would demand nothing else If I were doing it over again. We just had our master bath ripped out and redone, and I demanded the same integral counter and sink arrangement there. Just so easy to maintain.
I have taupe-colored Corian kitchen counters installed in 1990, with a bright white Corian sink that is fully integrated with the counters. Corian discontinued taupe as a color years ago and should bring it back. Everyone who sees my kitchen with light grayish cabinetry and similarly-colored counters thinks it was recently installed--not even close!! The maple cabinets are showing some wear but the counters still look very modern and nice and clean up so easily.
If I had it to do over, I would probably go for the lovely Caesarstone or Silestone available today as long as I could get an integrated sink with those--not sure if such an arrangement is available. Granite worries me, because of its hardness and because it requires periodic treatments to keep it looking nice.
My Corian sink is my workhorse and cleans up as easily as can be. I used to have to take a Brillo pad to the old stainless steel and worry about cleaning the seams around the edges where it overlapped the counters. Now I just use dish soap and a light scrubber sponge to clean the white Corian.
Everyone's habits and sense of style differ, however. Good luck with your remodel....I'm sure you will enjoy it. It's like a breath of fresh air.

When we did our kitchen over, we went with a large Blanco single sink. It's huge. I can put my turkey roaster in the sink. I can put large cookie sheets in the sink. It's wonderful. It's under-mounted because that's what I prefer. Anthracite in color.
I would never go back to a double sink. Not in a million years.

To each his own. Only stainless for me. Granite and ceremic stain and chip. Think grape juice, spag sauce, etc.
I got 2 big , deep stainless on one side of kitchen and a small stainless at the counter area think they call it a veg sink , something like that.
I'm practical type of gal.

I am so glad to have found this thread! I, too, am up to my eyeballs up-grading our kitchen --- and am not having fun doing it.
Not a thing has been ordered yet, but I think we're going to have a Fantasy Black Leather granite countertop (after first wanting soapstone, then going to quartz) and a Blanco silgranit sink. I think it'll be undermount double bowls and DH is encouraging me to get a 50/50 capacity because he says he's seen me use both our existing bowls regularly. He says I will miss being able to use two bowls simultaneously for separate functions. He might be right. We've narrowed the color down to either Cinder (a gun-metal gray) or Café Brown. The faucet (we did buy that) is rubbed oil bronze and is a touchless thing.
The floor has been the bug-a-boo. We've looked at sample after sample of woodgrains, and nothing has been a "Wow!" It felt like we were 'settling.' Then we wandered into another flooring store over the weekend and there sat a sample that was more like what I had in mind. It turned out to be IVC Moduleo vinyl slate tile (yep, vinyl). DH and I think it's the one and will be showing it to the designer in the morning.
So, Tansy, I do feel your pain. I will be keeping an eye on this thread, and hope you come back often with up-dates of your progress. And, if you're so inclined, I would love to view either links or photos. Good Luck! --Mrs. G.
