Do you prefer the paddle or the dough hook when mixing ground beef recipes in your Kitchen Aid Mixer?

I use the paddle and mix very minimally. Just enough turns to incorporate it all. I still use the meatloaf recipe from the Kitchenaid cookbook that came with mine ![]()

I prefer dough hooks to prevent overmixing with paddles. It best mimmicks the hand mixing that used to be the way you had to mix the meat.

Easy Cheesy Mini Meatloaves
2 cups ketchup
2 Tbsp spicy brown mustard
2 Tbsp brown sugar
2 pounds lean ground beef
2 large eggs, beaten
1 package (about 1 oz) dry onion soup mix
1 cup plain dry bread crumbs
1 cup shredded cheddar cheese
Place ketchup, mustard, and brown sugar in mixer bowl. Attach bowl and flat beater to mixer. Turn to speed 2 and mix until brown sugar dissolves, about 30 seconds. Remove 1 cup sauce and set aside.
Add remaining ingredients to mixer bowl. Turn to speed 2 and mix until well combined, about 1 minute. Divide into 6 equal portions (about 1 cup mixture each) and shape into 5x2-1/2x1 inch loaves. Place loaves in 13x9x2 baking pan generously coated with cooking spray. Bake at 375F oven for 40 minutes. Remove from oven and top each loaf with about 2-1/2 Tbsp of reserved ketchup mixture. Return loaves to over and bake an additional 10 minutes. Let rest 5 minutes before serving.
Yield: 6 servings.
Per serving: About 529 cal, 42 g protein, 40 g carb, 23 g fat, 146 mg cholesterol, 1589 mg sodium.
I find this recipe very forgiving. Less cheese, more sauce, add bacon, it's all good.
I have sucessfully made this recipe into one large loaf, adjust your baking time accordingly. Use a meat thermometer to make sure it's cooked properly.
You can also use a turkey/beef mix to help with fat. I haven't tried this exact recipe with just turkey, but I'm sure it can be done.
I also make my own dry onion soup mix, with lower sodium ingredients, to help reduce the sodium in this recipe as well.
Just for kicks, I turn this into a "kitchen sink" recipe sometimes. I'll toss in different combos of cheese, different sauce ingredients, like sriracha sauce, maybe a touch of horseradish, "fancy" flavored ketchup. I haven't had a bad one yet ![]()

I use the paddle for my meatloaf mixing and mix in on the first speed only. Comes out perfect every time. I mix the meat, salt, pepper, then add the eggs and mix, then liquid and quick cook oats. I never could make a good textured meatloaf until I finally started using my Kitchen Aid. Now they turn out perfect every time. The key is not to over mix. I never thought of using the dough hook. I may give it a go the next time!

I use the dough hook. I first saw it demoed by Laura Wethers that way. Tried it and itworked. I think either is fine.

Thank you for your opinion. That is not what I asked. I happen to have brokem my finger last week which makes it very difficult to mix anything by hand (or type) so I was simpy asking a question so that I could make a meatloaf, since I still have to eat.

Thank you! I used the dough hook and it turned out fine..it mixes VERY gently, something you dont notice as much when making bread...- Of course I will now have to try the paddle!
I broke a finger , so its impossible to mix by hand (or use knife to cut) fod at the table) so meatloaf was a good solution!
This is greaat for folks with arthritisin their hands and wrists too, who might not be able to put their hands in ice cold meat and mix
