Does anyone here use these mini cake pans?  I ordered the "As Is" offer and am wondering now "What was I thinking?"  Well, first off, I could make small cakes and freeze for those times only something sweet will satisfy.  My husband is diabetic and I'm on WW.  I need a knothead emotie here.

Some ideas might make the order worthwhile.  I watched the video but thought some here might have tried it and learned what turned out well or didn't.

I don't have the Rachael Ray Mini Cake Pans, but I do have pans similar to those. I make Zucchini Muffins in them.

You can make it very healthy by substituting the flour to whole wheat and substituting the oil with apple sauce. You can also substitute the chocholate chips to dark chococholate chips.

@Free2be  Yes, it is a great recipe. I make it all the time.  They freeze well, too. You might want to cut the baking time because the recipe is for muffin pan not mini cake pan.
