Hello all here it is June already and I'm really in a cooking mood today, I have five of our favorites that mom and Bill have been requested, but don't know which one to make. Anyone care to help me out?
#1 Turkey Meatloaf, #2 Stuffed Shells #3 Crockpot Pizza #4 Poppyseed Chicken w/ Pittsburgh Potatoes #5 Pepsi Chicken
Turkey Meatloaf ~ 25Angel
2 Egg whites 1/3 Cup ketchup 1 Tbls Worcestershire sauce 1 Tsp dried sage 1/2 Tsp salt 1/2 Tsp pepper 1 Small onion, grated 1 Small potato, grated 1 small sweet red pepper, chopped 2 Lbs lean ground turkey
In a large bowl, whisk together the first six ingredients. Stir in onion, potato and red pepper. Crumble turkey over mixture and mix well. Shape into a 12 x 4 inch loaf. Bake until loaf is no longer pink.
Temp: 350* Time: 60~70 Min Serves: 8
Stuffed Shells
4 Chicken breasts, cooked, cooled and shredded 4 Chicken bouillion cubes 1 box of pasta shells for stuffing 1-2 Boxes of Stove Top Stuffing mix ( I make my own stuffing) 3 Cups shredded Mozzarella cheese 2 Large cans of Cream of Chicken Soup 1/2 cup milk
Cook the chicken in boiling water with the bouillion cubes. When cooked, drain, cool, and shred the chicken. Cook the pasta shells ala dante or not quite, as there is additional cooking time in the crock pot and you don't want them to get mushy. Rinse and drain the shells. While these are cooking, prepare the stuffing mix according to the package directions. Add the chicken to the stuffing along with a cup of the Mozzarella cheese. When the shells are cool enough to handle fill each shell with the stuffing mix. In the bottom of a large crock pot or a baking dish 13 x 9 place a layer of soup that has been mixed with the 1/2 cup of milk. Place the shells on top of the soup, when you have a complete layer sprinkle with shredded Mozzarella cheese, spread another layer of soup mix, another layer of shells. Keep repeating the layers until all the shells are used ending with Mozarella cheese topped with the soup.
Temp: 350 Time 30 Min. Serves: 6~8
Crockpot Low Time:1 Hour Serves: 6~8
Crock Pot Pizza
1 1/2 lbs groung beef 1 med green pepper, chopped 1 med onion, chopped 1 15 oz can of tomato sauce 1 14 oz jar pizza sauce 2 tbls tomato paste 3 cups spiral pasta cooked and drained 7 oz chopped pepperoni 2 cups shredded Mozzarela cheese
Cook beef, green pepper and onion over medium heat until meat is no longer pink: drain. Add tomato sauce, pizza sauce and tomato paste; mix well. In a 5 qt crock pot, layer pasta, then beef mixture, pepperoni and cheese, keep layering until all ingredients are used up. Cover and cook on low 3~4 hours until heated through and cheese is melted. I add my pepperoni to the sauce, and I also added 1 lb sweet sausage instead of the ground beef.
Crock Pot: Temp: Low Time: 4~5 hours Serves: 3 ~ 4
Poppyseed Chicken ~ 25Angel
4 Large chicken breasts 16 oz sour cream 4 tbls poppyseeds 1 tube Ritz crackers, crushed 2 cans Cream of Chicken Soup 8 oz cream cheese 1 stick melted butter 4 chicken boullion cubes
Boil chicken in water adding the 4 boullion cubes, cook until tender. Drain cool and cut into bite sized pieces. Combine the soup, sour cream and 2 tbls of poppy seed, cream cheese stir until creamy. Add cut up chicken and mix. Pour into a greased casserole dish 9 x 13. Crush the Ritz crackers with a rolling pin. Mix the crackers, remaining 2 tbls poppyuseeds and the melted butter. Mix and spread over the chicken mixture. Bake until hot and bubbly, let cool a few minutes before serving.
Pittsburgh Potatoes
1 lb frozen hash brown potatoes 1/2 cup melted butter 1 tsp salt 1/2 tsp pepper 1 med med chopped onion 1 pint sour cream 1 can Cream of Chicken Soup 2 cups grated cheddar cheese 2 cups crushed corn flakes (I do not use the corn flakes I crush 2 sleeves of Ritz crackers crushed, with a stick of melted butter).
In large bowl mix potatoes, butter, salt, pepper, onion, sour cream, cheese & soup. Pour into a greased 9 x 13 casserole. Top with Ritz cracker mixture or the corn flakes which ever you prefer. Cover with foil and bake.
Temp:350* Time:1hour covererd Serves:6~8 + +15 Min more uncovered
Ginny's Pepsi Chicen ~ 25Angel
1 can regular Pesi, not diet 1/2 cup ketchup 2~4 tbls minced onion 1/4 tsp garlic powder 8 pieces of chicken 1/4 tsp dried oregano In a large skillet add all ingredients, except for the chicken. Bring to a boil, boil for one minute add chiken. Stir to coat chicken, reduce heat to medium cover and simmer for and additional 20 minutes. Uncover and simmer for 45 additional minutes or until chicken juice runs clear. Serves:4
When making this I usuall double the sauce recipe and cook accordingly and then put in a covered mason jar, then use for BBQ ribs, pork chops, or chicken on the grill. The sauce is excellent.
