Since I was alone again last night - yippee!! - had another Ham Sandwich. Today the remainder goes in the freezer for later use.

 

Cold right now but the experts say it will be in the 70s- Darn it - love the 81 yesterday. Really perfect. Although it was 81 it is not a hot 81 - ground still very wet and very cold and sure makes a difference in the overall feeling. Still will take the 80s this time of year.

 

Hope all are well - hope spouses are all well too. Keep eating well!!

Today I am making ham with green beans and potatoes.  It's in the Ninja slow cooker now and will give me a meal for today and leftovers I can freeze for several more days.  Smiley Happy

good evening all.exspecting like 3 inches of snow should be over by noon time tomorrow. ria made mini cherry cheesecakes today because she has to go some where tomorrow and she made extra for us. they cam out super good.  i actually like the mini better than a full size cheese cake.and she made beef vagtable soup witch allso came really good.hope everyone has a great week. anyone hued from danky? havnt seen her in a while on here.

Fixed a boneless pot roast with baby carrots, green beans, onions and red potatoes. THEN a friend brings over salsa, delicious Juan Polo chicken, potato salad, beans, rice and tortillas. Guess we have enough to eat for a few days. ALL was super good.

@Winifred  I have never heard of Juan Polo chicken, so I googled and watched an interview of the owner and creator.  I found a few recipes so will try one soon and let you know what I think. Smiley Happy  N. Ca is sadly lacking in such places, only have Kentucky Fried chicken, Taco Bell, etc., or at least in the surrounding area, no fair.

We woke up to ice, snow and 8 degree temperatures, which rose to a high of 14.   It was a lazy pajama day for teacher daughter, husband, and me.   Perfect day for potato soup.  

 

When I lived at home, mom stretched her pot of potato soup with a can of corned beef and canned peas.   Along with cornbread, it was a filling meal for all of us, and is still my family’s favorite recipe for potato soup.

RedTop, nothing like family recipes. I grew up when food was not plentiful - WWII - and also being from the South, I eat soups like that - nothing better. There was always a way of extending food and occasionally I still do it.  Mother would have a big pot of soup and it stayed on the stove, always warm, until it was gone. Actually only took a bit over a day. Hungry? Just pick up the long handled ladle and dig in. Also use to eat baby potatoes cooked with collards - another long cooking meal - so very good.

 

Suppose to be another nice day - we shall see. Sorry for you all in the super cold - and if you have snow/rain added to it - it must be miserable. We are suppose to get more rain tomorrow. Hope it does not rain as the areas hit by the excessive rain last week with mudslides, they cannot handle any more now. Will say my prayers - there are actually times when we cannot handle the rain. Rare indeed but it happens. The massive fires of a couple months back caused the disaster as vegetation is all gone.

 

Have no clue what for dinner - not in the mood for cooking still - that Flu has been miserable.Have a good day one and all.

@RedTop  When I make my version of New England clam chowder, it may as well be called potato soup, lol, as I put so much in the pot, love them, but then I put a ton of clams in also.  I use heavy cream, but I do not use a roux as I don't like the thickness that usually is found in this chowder.  I have been craving it lately, so must make it.
