@I am still oxox I have done it with black beans, but would have never thought of that with this type of bean. Thank you!

I like this recipe from a decades-old issue of Cook's Illustrated:

 

1 tbsp red wine vinegar

1 tsp minced garlic

1 onion, chopped

1 14 1/2-oz can diced tomatoes, drained

2 tbsp extra-virgin olive oil

2 red bell peppers, chopped

2 portobello mushroom caps, sliced thin

2 lbs pole beans, trimmed

1/4 cup grated Parmesan

1/4 tsp dried oregano

3/4 cup shredded mozzarella

 

Cook beans in 4 quarts boiling water in Dutch oven with 1 tbsp salt until tender, about 6 minutes.  Drain and set aside.

 

Heat oil in Dutch oven over medium-high heat. 

Stir in mushrooms and onions until soft and liquid has evaporated, about 8 minutes.  Stir in peppers until soft, about 8 minutes.  Stir in garlic until fragrant.

Stir in tomatoes, vinegar, oregano, and beans.  Season with salt and pepper.

 

Pour into 2-quart baking dish.  Sprinkle with cheeses and bake in 450 degree oven until cheese is bubbly, about 7 minutes.

Any green bean in this house is cooked with sautéed bacon and diced onion.  Salt and pepper added before serving.

I saw your post and I had to look at it. My mother in law Makes them with potatoes, Iitalian pole beans, olive oil,  salt and garlic. And if she just makes just those string beans.  I was surprised when I saw you wrote Italian pole beans. She's been making and growing them her whole life. But the last6 Yeats we can't get them to grow. Have a great holiday.

Can you get fresh pole beans this time of year where you live? My grandmother always cooked pole beans with small potatoes. I only see fresh pole beans  in the summer. I would love to try this with stewed tomatoes but I would have to use canned or frozen beans.

Here in Rhode Island you don't see Italian pole beans up here. Just the local farm grows them but there Down here.
