Afternoon All, hot/humid again & will be for at least a few days, so the a/c is getting a workout.

 

I love fried eggplant also, I bread it & fry in olive oil, & like Winifred love it for a sandwich, & also make eggplant parmesan, got me wanting it, will have to pick some up Friday.

 

Tonite I'll fry a ham steak & roast a sweet potato, it's just me today so the leftover ham will make a good sandwich for lunch tomorrow.

From the picture posted I obviously have never seen a white eggplant - still haven't. Oh well. I will settle for the purple one and just peel off the peeling - funny how it started giving me trouble when I ate it - could hardly breathe.

 

By the way I dip my fried eggplant in the "normal" flour, egg and milk" batter. What can I say - also use a LOT of pepper.

 

Tonight providing I can get it all done - been a hectic day - AGAIN - as the little one who is walking everywhere bumped her head pretty good and I took her to Urgent CAre. She is fine = also learned some things about head injuries I NEVER knew. Interesting. It took a lot of time. Had the collards already on the stove but the small pork roast was still in the freezer - have it in my slow cooker but am cooking it at a higher heat  - like Roast. LOL. Am hoping it will be done by at least 7 this evening - Mashed potatoes as a go with - of course - what else.

I did get my pork roast done - covered it with those crispy dried onions - the onions did not handle the higher heat any too well however. Had collards and mashed potatoes - very good. Tonight am thinking of handing out the frozen dinners. LOL.

Finally fixed my eggplant - fried of course - this was dinner last night. Usually eat only the eggplant, nothing else. Am seriously thinking about making a sandwich of eggplant for breakfast. Well why not, I like it!

@Winifred  You go for it.  I broke out and made French toast again this morning before work and cucumber salad for lunch.  I am currently cleaning up the vinegar from my lunch bag because I did not buy leak proof containers and forgot it had liquid in it.  TGIF!!

@Laura14  A few years ago, I tackled this, and it was so fantastic, I made it often, much to DH's delight, only I never made the kind he loves, everything but the kitchen sink, I made potato, clam, mushroom, eggplant, onion, and olive, sometimes pizza with  tomatoes, capers, herbs, and on and on, sometimes with cheese, various types depending on the topping, and sometimes not  When he wants the type he loves, he goes to the pizza parlor, lol.  There is no limit to the toppings.

 

I did this in my old kitchen, and if you can believe this, since my kitchen was remodeled two years ago with top of the line ovens, I have never been able to make the pizza crust as fantastic as in the old oven, so I have stopped making it as often, but if I can ever get some days with good time in them, I will keep trying in the hopes that I can duplicate exactly.  I always drizzle extra virgin olive oil and sprinkle minced parsley over the top before serving.

 

Are you totally new to cooking?  You mentioned that you were new at this.

Afternoon, dinner tonite will be leftovers brought home from the German restaurant last nite, was a fun time with good food, didn't stay for the outdoor concert as it was way too hot, wanted to get home in the a/c.  Don't know what DD will be eating,

 

Weather is dreary, hot/humid but no rain in sight, so they say, I'll have to get out & water the plants, the grass will wait for Mother Nature, as my water meter is running too much.

 

@Winifred thinking of putting some pork ribs & sauerkraut in the slow cooker, should I add anything else??
