Due to the weather we are celebrating the 4th on Sunday. Both my daughter and Son-in Law are on a no carb diet. They are doing great, but I always feels bad when they come because they can't eat the desserts I make. I googled but didn't really find anything. Any suggestions.

You can make cheesecake with no crust--No carbs, but still very fattening!

Cool Whip has 1 carb per T. I think it is real whip cream that the low carbers eat.
I used to have a fantastic low carb mousse recipe. It called for Sugar Free instant pudding and ricotta cheese I think. It was really rich. Then you can top it with real whip cream. It was good plain though. You might do a search for a recipe like that.
Low carbers eat sugar free jello. That's not much of dessert for me though. LOL

Low carb or NO Carb.
Blue and strawberries are on the lower end of the carb ladder and many low carbers eat them

You can make sugar-free meringues with egg whites, Splenda, and flavor such as vanilla or almond, or even cocoa. For another time you can buy the sugar-free variety from Miss Meringue online - they're delicious.
Basically you whip egg white, slowly fold in Splenda and vanilla. Pipe onto a parchment covered cookie sheet and bake in a low oven.

I hope you mean low carb or that you are removing simple carbs from your diet cause complex carbs are essential for life. First, you know nothing about nutrition or a low carb lifestyle. That's okay. You need a good book on the subject before you begin. Sugar free j e l lo with berries and fat free whipped topping, real Greek yogurt with berries, melons of all types, I'm addicted to red grapefruit sections that come in hard, whole grain crackers with a smidge of sugar free peanut butter. Buy any low carb book and you'll find suggestions.
