@ECBGd

I'm feeling the lack of enough potato salad.

Was usually too busy or lazy to make it ofen enough , and have never found a store or restaurant that  makes it good  enough to carry home.

Watermelon and nectarines.......the last nectarines I got were fat and juicy and the watermelons were the best I can remember.

Now the best I can look forward to are black, seedless grapes and HALOS .

I haven't had potato salad either.. Doesn't any place make it from scratch and not use those factory made tubs ?

Garden fresh sweet corn and tomatoes. Wish they tasted the same in winter, fresh is best.

Yarden grown tomatoes . We had a better crop than last year . I managed to keep the squirrels off of them with persistent sprinkling of cayenne pepper on the tomatoes they ripened . I love autumn but miss the 'maters' . Rare for store purchased tomatoes to match in flavor.

Also will miss the really ripe , sweet watermelons of summer and state grown muskmelons.

Michigan strawberries, Red Haven peaches and bi-color sweet corn. The seasons were short and the crops quite limited. I did manage to get a couple of flats of strawberries and put most of them in the freezer, but they don't taste the same as they do when they're fresh.

Re: Is There A Food You Didn't Get Enough Of This Summer?

@ECBG, I imagine there are a lot of different recipes for creamed cucumbers, but here is the "recipe" my grandma and mom made - and I do as well:

1 medium to large cucumber, peeled and sliced thin

3 or 4 thin slices of onion

1 1/2 Tbsp sugar

1 1/2 Tbsp white vinegar

1 to 1 1/2 cups half & half (depending on the size of the cucumber)

In a medium bowl, sprinkle the cucumber slices and onion with approx 1 teaspoon of salt ; let sit for about a half hour until the cucumbers are soft; then rinse in cold water and drain.

Add the sugar, vinegar and half & half to the cucumbers; mix together and chill

Note: add a little extra sugar to the half & half mixture if needed.
