In the frosting thread, it says let your butter soften on the counter, don't nuke it or the frosting will turn out different. As long as you don't melt the butter but just soften it, what could go wrong? I always nuke my butter for baking, maybe 20 seconds will do it, sometimes another ten for two sticks. Since I don't use butter on a daily basis, I just keep it refrigerated. Am I messing up my baked goods by softening butter in the microwave?
