Hi. And hmmm this doesn't surprise me as I ponder it more. I bought the recent TSV IP Duo Plus too and LOVE it. And I haven't used it for the purpose I bought it! (Which was the Sous Vide). I love the lid improvements. So I'm sure I'll try the SV at some point, but right now I'm appreciating the auto sealing feature and the safer manual pressure releasing feature, both of which are built into a lid re-design.

 

is it true that the Duo Evo Plus will replace the Ultra? What gives me pause about the Evo, which really sounds like a wonderful upgrade, is that none of its parts are interchangeable with other IP models. Everything in the Evo is new and different. Great if you're a first IP purchaser but not if you are thinking about adding to what you already have.....
