Your stuffed ham sounds wonderful! I can see why your father loved it. I really like raisin sauce ![]()
I thought I would share a picture of my last year's Jacques Pepin ham. I took a picture of it because I couldn't believe I had cooked it
I used a big old stock pot and attached a thermometer to the side. I checked, every now and then, to make sure the temperature didn't creep up.

Having given this topic a lot of thought, I cannot think of a way I don't like a good piece of ham! Well, except with pineapple.
LOVE it in a big thick slice on a plate or just pulled off the ham, in a sandwich and especially a ham hock cooked in pinto beans! HEAVEN on earth with sliced tomato and fried okra.
Some hams are much better than others. They should be lightly smoked and firm, not that mushy highly injected stuff you often get. They should have a little "tooth" to the meat. You should be able to see the grain and texture of the meat.
Now I'm hungry.

I LOVE ham but sometimes it is so salty. Also don't buy the cured hams anymore due to all the junk they put into it. Have never cooked a real ham before--its called something different than ham--can't remember tho. I love the leftovers and make scalloped spuds with ham or any bean soups, ham salad, mac n cheese with ham----oohh so yummy. Tried a Kansas City ham once--awful. That was the last time I bought ham--prob 10 years ago. I do eat a little if its on the menu at someones house.

I would love to have that recipe. It looks great! I bet that skin was nice and caramelized and tasty! I would have used the drippings to cook up some rice and topped it with lima beans and a slab of ham. YUM!!! I bet that made great sandwiches too! Now I want to bake a ham!
