The Instant Pot is the best!!!  You won't believe how quickly great dishes can be produced in this pot and if you need potatoes or rice done in a flash....this is your pot!  If you purchase be sure to check out Chef AJs recipes for the Instant pot on You Tube..  I think this pot is a must in the kitchen. It is expensive and worth every penny.  The pot makes cooking easy.  So a really great item for those who don't like to cook, those who do, and for those tired moms who have been working all day and need a quick nourishing hot meal for the family.

Thanks for the reminder--I rushed into Amazon and got the 5 quart model, along with Meredith Laurence's "Delicious under Pressure" cookbook and a steamer insert.  All for less than $100.00!!

I did go look at the deal, and was tempted to get it. But my kitchen is cram packed with more appliances and gizmos ...  I don't know where I'd put something else.

I got mine in November. I just made Szechuan Eggplant with Japanese eggplant and jalapenos from my garden. Three minutes under pressure. I will make this again.

My sister got one today because she's had two that have died. I haven't heard of anyone else having them die like hers have. I love my Instant Pot!

The recipe is in a great book called The New Fast Food by Jill Nussinow. It is entirely vegetarian. She has great charts in the back of the book for pressure cooking all types of grains, beans, vegetables and rice. While I would love to give you the recipe, I don't give out recipes that are copyrighted in a book. If it were on a website, then I would provide a link. If you go to her website called Veggie Queen she has listed many recipes but not this one. I am not vegetarian but I love vegetables.
