I wan to eat a low carb/high fiber diet and I need to eat more beans. I went to the store and purchased black beans in a bag. I did the quick hydration that was listed on the bag and they were okay, still firm but ok (not great). Today I tried the slow method where they soak for 10 hours, and they are still hard. I made quesadillas for dinner and I put the beans in them eventhough they were still firm. What am I doing wrong? I want to try to make black bean burgers, but until I figure out how to prepare the beans correctly, I don't want to try them... Any suggestions?
