Re: I need help creating an EASY Greek menu, thanks.

Those Greek green beans sound delicious!

I'm thinking something simple like lemon-roasted potatoes or some good olives and feta cheese, maybe some roasted red peppers.

Now I'm hungry...

Re: I need help creating an EASY Greek menu, thanks.

I'm in the middle of creating the moussaka. I used ground beef and it has to simmer for at least an hour. I think I'll make and add the béchamel sauce tomorrow before cooking it, unless someone has a better idea about that.

I was a little leery about adding cinnamon to the ground beef… still hoping I didn't make a mistake with that.

I'm also making a Greek salad and an olive tapenade with pita bread on the side. That's more than enough food for four of us, though I LOVE LEFTOVERS!

I'm looking forward to trying the other dishes posted here at another time.

I hope you try them sometime. We used to go to an old time Greek restaurant, and this is the way they made their green beans. It's the only way I like green beans cooked until soft.

The lemon potatoes and olives and feta sound good to me right now. I'm hungry too!

House cat ~ It sounds like you have the perfect meal planned! I love Greek food. DH wanted me to make moussaka last weekend...but I didn't......Let me know how it turns out with ground beef. We had a greek dinner on Easter....I can eat the cuisine all the time.

Do you use cinnamon when you make it? All the recipes I reviewed used cinnamon, so I took a leap of faith. Right now while it's cooking, all I can smell is the cinnamon. I'm doubtful about this.

House cat, don't worry about the cinnamon. I make pastitsio and you stir cinnamon and a can of tomato paste in the ground beef and it is wonderful. Cinnamon does not taste the same without the sugar we usually associate with it. It won't taste like cinnamon buns!

Thank you! I'm so glad to hear that. I really thought I ruined it.

Funny you should mention the tom paste.. I was hovering over the pot worrying about the cinnamon and decided to add a heaping tbs. of tom paste. I guess great minds think alike!

My former in-laws were Greek and they would cook up the best lamb kebobs. Believe they marinated them in lemon juice and olive oil with seasoning. Then put the meat on skewers with peppers and onion and popped them on the grill. They were really good without too much work.

I've saved the recipe and will definitely give it a try. Hoping to find some nice, fresh green beans at the farm market. Thanks for posting the recipe!
