How to bake the the Authentic Gourmet Butter Croissants

Hi, I received the Authentic Gourmet butter croissants today and can't understand in the baking instructions what is meant by "use grids and baking paper" and also do you bake yours on a baking sheet? Thanks so much and Happy Thanksgiving (almost).{#emotions_dlg.rolleyes}
