I have never made real fried chicken either. I have oven fried. My dear MIL made the best fried chicken. She would cut up a whole chicken and fry. I do not know what I am afraid of. Might try it this winter.

I hardly ever make fried chicken anymore. I make it in the oven when I make it. If I make fried chicken I soak it in buttermilk several hours or overnight. I buy a seasoned flour. Don't know what's in it but it's really good. I take it out of the buttermilk, dip in egg, & coat with the seasoned flour & fry in peanut oil.
