What's the best way to cook two bone-in chicken breasts without drying them out. I have a stovetop and an oven, no outdoor grill.

This is Ina Garten's method. It always works for me
Roasted Chicken Breast
Skin on, bone in
Rub with olive oil
Sprinkle on salt and pepper
375 for 35-40 minutes...165 degrees
Comes out very juicy

I always soak my chicken in a salt water bath before I bake, grill, etc.
I think it adds moisture to the meat....works for me.

Hi @house_cat! I marinate mine in buttermilk and spices of choice overnight. Take them out, and dredge them in flour (or add the seasonings in the flour if you prefer) and I give them a spritz of PAM/EVOO. Most recipes call for an over 400 degree oven, I have a large toaster oven and set mine at 350-375 depending on the size of the breasts and roast on a rack. I start checking the temp at 35-40 minutes and adjust accordingly.

Thank you, ladies. I'm going to try Ina's method. I think I tend to overcook chicken. I'll let you know how it turns out.

I season it & put a little beer,wine or orange juice in tin foil & wrap each piece individually.Bake in the oven on 350-375 for about 45 minutes.
The chicken marinates while it’s cooking.Comes out moist & delicious!!

Omgosh! These are all great ideas! I'm trying to eat "cleaner", but if I have to choke down another piece of dry chicken I'm going to cry.

@house_cat You can also add your favorite veggies to the individual tin foil packets.They take on the flavor of the marinade.Yummy!!

@house_catI have been known to be called The Enabler but I noticed that tomorrow's TSV is an air fryer. If you are trying to eat cleaner, this may be something to think about. For a long time I just tossed frozen stuff in there and maybe a few veggies but recently have graduated to bone in chicken and it is delicious, crispy and very juicy and the amount of grease in the bottom of the unit is eye popping. Just something to think about and if you have any questions please just let me know.

Hi @house_cat. I saw your comment about eating "cleaner" and had to let you know that I started eating "cleanish" about 3 months ago. I started out eating completely clean, but that's hard to do, hence the "cleanish". At any rate, what I want to tell you is that since I've started eating this way, my headaches have almost disappeared. (In case you don't remember me, I am a migraine sufferer like you).
I absolutely believe that this change in eating is why my headaches are so few and far between. I hope you reap the same benefits as I am!
I tend to cook my chicken to death, so I look forward to trying some of these recipes. They all sound good!
