How about some recipes for a deep fryer?

Bought a new Emeril's deep fryer last night. Been a long time since I've done any deep frying, but I recall from the fryers we've had in the past we had a devil of a time with food sticking to the basket. Any suggestions there? Any good coatings/recipes for frying chicken/fish etc?
