How Long to Cook Corned Beef?

I have 2 pieces boiling away...one is about a pound and a half the other about 2.5 lbs.

I typically would cook a 3#'er about 3 hrs.

Do you think 2.5 hrs. would be ok for the 2 pieces?

It must be fork tender to ensure it is thoroughly cooked and an instant read thermometer would also make it easier to be totally sure.

Allow 1 hour per pound if you are boiling it.
