Then try pork loin roasts, they're very small and the most tender. They're grilled or baked.
It may be that pork chops come from an area you don't find tender.

The pork tenderloin is like fillet mignon in beef.
If you gently roast a pork loin roast, roast slices are much more thin than a pork loin chop, so it appears to be more tender.

All pork roast only at 325, not 350.
Pork loin roasts are also good in the crock pot.

In all meats, the key to tenderness is low heat, cook only until desired doneness.
The moisture flows when I slice a pork loin roast that rested covered about 15 minutes.
There are oven meat thermometers with oven door clip on gauges. You don't even have to open the door. Look at amazon.

Personally the only pork chops I like are from Perry's Steakhouse and Grille........TDF.

@ECBG @Effie54 You can visit a website called ThermoWorks and they have great thermometers of all sorts and great sales. They have some round Dot ones with thin cables attached to a probe. Probe goes in the meat, cable comes out the oven door (or grill) and it even beeps when the meat is at temperature. They warn you not to buy from the big Amazing place.
I like everything we've gotten from them, especially the little Pops thermometers. We use them several times a week and they come in pretty colors--which people love for little gifts! And the Dot gets used for bbq!
