I'll eat a spinach salad but I will not eat cooked spinach. It's kind of like cooked okra to me. One of those vegetables that I just can't get down.

Usually sautéed with some garlic. I also like it raw in a salad or on a lettuce wrap.

@ECBG I love that but to tell the truth? A wilted spinach salad, not too heavy on the dressing, is heaven on earth: bacon drippings, vinegar, salt and pepper and a touch of sugar, lemon juice, and poured hot over a salad of spinach, green onions, green onions, bits of hardboiled egg and then the crumbled bacon. . . I have to have this about ever 5 years
My dad raised spinach when I was pre-school age and I thought that was the best thing on earth. Before we got the cattle. . . ![]()

I WISH I could taste the salad you described.
My country (kind of) grandmother used to do something similar with spring or "leafy" lettuce. You had to enjoy it or it would wilt before your eyes.

I cook it as you mentioned @ECBG , if I’m really hungry,
I sauté until about 1/2 done, then shape it into a nest in the bottom of the pan, crack an egg 🥚 into it, and continue cooking until egg is done.
My for real country Grandmothers made wilted lettuce 🥬 salad as you described- yummy.

We cook it very simply.............in two bowls in the microwave for 2 minutes to wilt and then sprinkle with a little vinegar.

I brush my 5 quart stockpot with olive oil, add half a large bag of baby spinach and sprinkle it with garlic salt. Add the rest of the bag of spinach and sprinkle with more garlic salt. Put a lid on it and cook on medium low heat, stirring occasionally, until it reaches your preferred texture. I'll also add spinach to soups, stews and stir fries.

Mostly I use it fresh, in a salad or throw a handful in for smoothies. and have made pasta from it too--
