Re: How Do You Fix Cube Steak?

[ Edited ]

I have a neighbor who doesn't like beef!  Only buys ground beef for burgers cause all the other "stuff" hides the beef!

My son gets lots of venison, which tends to be tough, so he bought a tenderizing machine.  Works great.

We got a 'not so tender' prime rib and ran the cooked pieces through the machine!  Solved the problem!

Does a hamburger gross you out?  Just curious.  You could be a vegetarian, in which case meat in general could be off-putting. I have friends who don't like the smell or look of meat.

But, in general, a cube steak is pretty innocuous.  Not like a pig's head or something like that.

Being 50% French and 100% southern, I need my gravy/sauce!

But the "naked" steaks do look good.

Re: How Do You Fix Cube Steak?

i choked on cube steak when i was kid.   never ate that again.

this dish could be made with hamburg. scramble up the meat or make patties with panko crumbs, egg, mustard and seasoning.  i do like it with gravy and mashed ... guess that defeats the "clean meal" idea.

@ECBG   Looks good to me!  I’m going to try it.

But I have to agree with some here, I think meat quality isn’t what it was years ago.  Cheaper meat or $30 steaks, I’ve not had luck with ANY beef lately.

I have not been able to find good cube steak in a long time. When I make it, I use my cast iron skillet. I rinse the meat, then dredge it lightly seasoned flour and brown it in smart balance until it is really brown, then turn it over and do the other side. Add sliced yellow onion, put the lid on and let it simmer until the meat is tender and done. The flour makes its own   "gravy" when I add a little water...or sometimes milk after I take it out and that may thicken it a bit. DH wants more gravy  but he likes it okay with less....this is the most "southern" way I can make it now with DH being a heart patient. I serve it with different sides depending upon what I have, but usually biscuits and green beans. It is yummy but you can go full-throttle and chicken fry it and do cream gravy if you prefer. We have cut way down on our red meat consumption, and it's probably all for the best considering the available meat choices I see now. I am buying a lot more chicken and fish now.

Sorry you have had issues.  There are a lot of great cooks here, some differences because of regional tastes which is expected.

I'll be glad to help you any way that I can.  I make roasts, pick out only the deepest red no visible gristle cube steaks, and use sirloin steak if I am making stir fry.

I love sirloin on the grill too.

In the past, I think so many people would buy a beef and have it cut for the freezer.  Of course, there are  differences from the past.

Cooks dot com and All Recipes are wonderful sites with reviews.

I taught Foods, Adv Foods, Food Science but embraced the Interior Design and wrote curriculum in that area.

Cube steak may have been difficult for you to chew as a child or you may associate what it was cooked in (gravy) with the cut of meat if you were very young.

@ECBG   Thank you.  I’ve been cooking forever, and we don’t eat a lot of red meat, we eat more fish, pork, chicken and shrimp.  I feel I’m a pretty decent cook.  How can steaks on the grill just not have great flavor?   We eat medium steaks mostly, so it’s not cooked to death.  Maybe our tastes are just changing.  Haven’t make cube steak in a long time.  I love this kitchen forum for new ideas.

I enjoy your posts in the fashion forum and here.  Take care.
