Like January121, I put mine in a container and freeze it. Then I try really hard to remember to put it in the bin on trash day, hopefully soon before the boys come to pick up.
Small amounts get swabbed with paper towels - by all means, it does not go down the drain if I can help it. We have a pressure sewer system that requires a pump that could become desperately clogged with grease, and that would be a major headache if a malfunction occurred. Not to mention the pipes.

I take some aluminum foil and make it into a little "cup" and pour any oil or grease into it. Once it cools and hardens I fold it up so the stuff is all enclosed and put it in the trash.
Fats, Oils, and Grease - aka FOG - should never be sent down your drain. It eventually clogs up sewer lines and can cause backups. This especially applies to industrial users such as restuarants.
If you want to see some FOG backups search online; last year there were stories in the news about FOG buildup in sewers and it was not pretty.

Old butter containers, jars with lids from spaghetti sauce etc.
As long is there is a lid. I make sure the oil is cooled down a bit, before putting the oil in the containers. Some plastic ones may melt-ouch!

I live in the rural south. Growing up we always dumped it onto an ant bed in the yard. It kills most of them and the bed. We had too many acres to spray with chemicals to kill them, plus those checmicals weren't around back then. Now I don't fry but if I have a bit of grease from cooking bacon, I soak it up with paper towels and toss those.

We do not have hardly any but if we do we burn it in our furnace.

I pour it into a can or jar and throw it out in our dumpster.

I let it cool, put it in a glass jar with a lid, and throw it in the trash.

I put mine down the kitchen drain when I do the dishes. The sanitation utilities are designed to handle household oils and fats.
If you have a septic system, or have huge amounts of oil (like from a deep fryer), you can take it to Jiffy Lube, your mechanic, or your town's Household Hazardous Waste Roundup.
