My favorite ways with with green beans:
#1-stir fry in hot wok or sautée pan with onions, ginger, and garlic. Add grilled shrimp, sliced flank steak, or sliced chicken breast, optional..
#2-sautéed with bacon, and onions. Sliced mushrooms optional.

@EatWell I have heard of this method, but after blanching.

Enoying the fresh green beans and veggies now.
Trim the ends, boil in a shallow pan of salted water. They should still have some crisp to them. Finish with a little EVOO & salt to taste.

Yes. You can blanch first if you like your beans with less crunch. Works with string beans, sugar snaps, snow peas, and if you can find them Chinese Long Beans. Make a light sauce with equal parts of cornstarch and water. Add soy sauce and a pinch of sugar to taste. Serve with rice.

@stevieb wrote:@ECBG I agree with you. I love pole beans, though they're increasingly hard to find and I don't enjoy crunchy green beans if they've supposedly been cooked. They don't have to be cooked to a mush, but they do need to be on the soft side.
@stevieb We cook alike!!! Come on over!
I have found them at my Publix, although, I haven't been there in a long time. Not fond of the thin green beans from local farmers unless it's for a dip.
LOVE green beans! Especially with potato salad, deviled eggs, and fresh sliced tomatoes!
@ECBG Oh yes, that sounds like a menu I could really enjoy!

My preference is blue lake. Trim, snap, wash. Sauté bacon and onion until bacon is cooked and onion is soft, add beans, cover with water and simmer to required level of doneness, salt and pepper before serving.

Absolutely pole beans. Kentucky Wonders are the ultimate.
Water, ham and beans, cooked until they are no longer bright green and are not crisp. Cook liquid down as the beans cook, serve in a pasta bowl with some very good fresh hot cornbread and butter.
If possible, have peach cobbler for your fruit serving afterward.

I like mine tender with just a little crisp. I can't stand them soggy & soft.

Dang you @Sooner... I love them cooked with ham or ham hocks, I love corn bread or corn cakes and I love peach cobbler...

@stevieb We would have a good time! Since it's you I might even smother a pork chop! ![]()

I can't do a crunch and "overcook" mine with bacon and onions. For fresh green beans, I will simmer them for 3 or 4 hours. When I buy frozen, I simmer them almost all day.
